Silky Tofu Dressing

Silky Tofu Dressing
Use this high-protein dressing on salads, boiled vegetables, noodles, or sea vegetable dishes.

4 TO 6 SERVINGS

1 pound soft tofu, silken is fine
6 tablespoons soy sauce
(or to taste), divided
sor until smooth.
2 tablespoons brown rice vinegar
1 teaspoon extra virgin olive oil
miso paste for five minutes. Add
1 cup water


1. Cut the tofu into large pieces, and boil basil or chives, or a small piece of it in water with 2 tablespoons soy sauce for five minutes.

2. Drain the excess liquid from the tofu. Blend the tofu with the rest of the soy sauce, vinegar, olive oil, and 1 cup water in a blender or food processor until smooth.
Variation: Simmer the tofu in a miso paste for five minutes. Add ginger juice and herbs, such as basil or chives, or a small piece of avocado for a change of flavors.
