Coconut oil had long been dismissed as one of the “bad oils”—a saturated fat that causes weight gain and may promote heart disease—but a growing body of research suggests that the experts of the past got it all wrong. Many of today’s nutritionists argue that coconut oil can actually boost metabolism and help fight infection. Turns out not all saturated fats are unhealthy, says Bruce Fife, author of The Coconut Oil Miracle (Avery, 2004). What makes coconut oil a unique and particularly healthy oil?

• It’s a rich source of medium-chain fatty acids, says Fife, unlike lard and many animal fats, which contain less healthy long-chain fatty acids. The body converts medium-chain fatty acids to energy more readily than the long-chain variety, which means they help stimulate metabolism and weight loss.

• Coconut oil contains lauric acid, an antibacterial agent commonly used in soaps and shampoos, which may boost immunity when eaten.

• “It kills pathogens in the gut,” says Sally Fallon, president of the Weston A. Price Foundation, a nonprofit nutritional research group, and co-author of the book Eat Fat, Lose Fat (Plume, 2006). Because a number of viruses—from influenza to HIV to hepatitis—are coated with these pathogens, Fallon says coconut oil can help treat a wide range of illnesses.

• No evidence shows that coconut oil clogs arteries, according to Fallon. Although the American Heart Association calls coconut oil a saturated fat on par with lard or butter, Fallon says different saturated fats have different properties, and coconut oil happens to be one of the healthier ones.Ready to try a beneficial dose of coconut oil? The experts recommend the following:

• Stir a spoonful into a cup of hot water and drink it a half hour before mealtime to rev up the metabolism, says Fallon, but he cautions those used to very low fat diets to start slowly to avoid nausea.

• Use the same amount of coconut oil as a substitute for vegetable oil in soups, sauces, or sandwich spreads. For homemade baked goods, use 3/4 cup coconut oil in place of every cup of vegetable shortening.
